Pumpkin Whooppie Pies

 (Flour and spice and everything nice)
 (Sugar, dark brown sugar and oil)
 (The dry ingredients mixed into the pumpkin mixture)
 (Scoops of dough on parchment paper ready to be baked)
(So soft and flavorful, this treat is a fall must)

The whoppie pie has always intrigued me - perhaps because they consist of two thick and fluffy cookies separated by a sumptious layer of icing.  When I stumbled across this recipe for Pumpkin Whoppie Pies with Maple Icing, I just had to make it.  I am somewhat fixated with any recipe right now that includes pumpkin, so be prepared for many more recipes.  
The pumpkin whoppie pies were absolutely delicious, almost cake-like, yet light at the same time.
